As it get’s colder, I switch up my menu. Wednesdays are for soup from now till around May, because in Winnipeg, it stays cold for that long!
I am going to share a recipe today that I like to call, Fridge Soup.
Fridge Soup:
In stock pot heat up 1 tlbs olive oil
Chop up onions and carrots and add to pot. Cook till softened.
If using protein (Okwumabuas love protein) cook and add the onions and carrots here.
Add any vegetable in your fridge that is sad and needs to go. ANY
Add 6 cups of broth and/or water
Boil and let simmer before adding any starch (Okwumabuas love barley) pasta, potatoes, whatever you got
Add spices and seasonings that go with your flavours. Sometimes I throw in a can of chopped tomatoes if I want a red looking stew. Add milk/cream if you want it creamy or just leave it as is for a broth.
